How to make Cashew Cheese

This amazing cashew cheese recipe was created by Claudia from Sunshine Soulfood and eaten (very quickly) by the crew at Noosa Beach Yoga!!

Make a batch of this marvelous vegan cashew cheese and use it anywhere you want to add a little cheesy bite!

The secret to Cashew Cheese

The secret is in the nutritional yeast. Nutritional yeast can be purchased in most supermarkets and health food stores. Don’t confuse nutritional yeast with traditional yeast, the taste is completely different and quite unpleasant! Nutritional yeast won’t help leaven bread or grow and froth as it is heat treated which ‘kills’ or deactivates the yeast.  It is grown on molasses (a fantastic source of iron) and when harvested can be made into flakes or powder.  The brand that we use is Braggs but there are a variety of other brands out there.  Just check to make sure that it does not include whey (an animal product used in some other brands).

Using cashew cheese in different ways.

This delicious recipe can be modified to suit your needs.  If you want to use it as a dip, you can make it thicker by leaving out a little of the water.  If you want to use it as a base like we did in our Vegan Pizza Recipe use a little more water so that it becomes easier to spread.

Cashew Cheese

Delicious cashew cheese created by the gorgeous Claudia from Sunshine Soulfoods

Ingredients

  • 1.5 cups cashews soaked overnight
  • 1 tsp salt
  • 2 tbs nutritional yeast
  • 1 cup almond milk
  • 1.5 cups water
  • 1 tsp onion powder
  • 1 tsp turmeric
  • 1 tsp lemon

Instructions

  1. Blend cashews in a food processor.

  2. Combine dry ingredients with the cashews and mix well.

  3. Tip dry ingredients into a bowl and make a well in the centre.

  4. Slowly add the almond milk

  5. Add the water until you reach the right consistency. 

  6. If you want to use it as a dip you can make it a little thicker by leaving out some or all of the water. If you want to use it on pasta add a little more water.

Caramel Slice or Millionaires Shortbread

This delicious caramel slice also known as Millionaires Shortbread and no wonder - it is so rich and decadent.  Would you believe this is the vegan version! So excited to bring this to you from the kitchen of Sunshine Soulfoods amazing chef Claudia!

Servings 1 person! hehe

Ingredients

Base

  • 60 grams medjool dates pitted & chopped
  • 2 tbsp coconut oil
  • 30 grams almonds activated
  • 1 cup cashews soaked

Filling

  • 1/2 cup cashews soaked
  • 200 grams medjool dates pitted & chopped
  • 2 tbsp coconut oil
  • 2 tbsp rice malt syrup
  • pinch himalayan sea salt flakes

Chocolate Topping

  • 50 grams raw cacao
  • 80 ml coconut oil
  • 150 ml rice malt syrup

Instructions

Base

  1. Soak the cashews and almonds in water for 2 hours, make sure to drain well.

  2. Using a food processor, process the almonds and cashews until coarsely chopped. 

  3. Add the dates and coconut oil.  Process until a sticky mixture forms. Press into prepared pan.

Caramel Filling

  1. Using the food processor, process the cashews until finely chopped, add the dates and coconut oil.  

  2. Process well, then add in the rice malt syrup and pinch of salt flakes. Process until smooth. 

  3. Spread over prepared base. Use a spatula to smooth the surface. 

  4. Place in the freezer for 1 hour or until firm.

Chocolate Topping

  1. Place the cacao, rice malt syrup and coconut oil into a heatproof bowl set over boiling water. Be careful not to let the bowl touch the water.

  2. Stir the mixture until all combines and thickens. Cook, stirring constantly, for 4 minutes or until mixture thickens and comes together. Sprinkle with sea salt, if using.

  3. Carefully pour the mixture over the base of biscuit and caramel.

  4. Refrigerate overnight, then use a sharp knife to cut up coarsely. 

  5. Sprinkle with sea salt flakes or a little cacao.

  6. Try not to eat too many.

Vegan Pizza Recipe

Try this amazing vegan pizza recipe. It is so simple to make the base. And you can pre make them so you have them on hand in the freezer anytime you feel like 

Course Dinner, lunch
Cuisine Pizza
Prep Time 20 minutes
Cook Time 15 minutes
Total Time 35 minutes
Servings 4 people

Ingredients

Vegan Pizza Base

  • 1 & 1/2 cups plain flour (could swap for gluten free)
  • 1 tsp baking powder
  • 1 tsp oil
  • 1/3 cup almond milk
  • 1/2 tsp salt

Topping 1

  • 2 tbsp cashew cheese spread on base
  • roast carrot
  • roast sweet potato
  • roast beetroot
  • sprinkle sage

Topping 2

  • tomato puree
  • olives
  • baby spinach
  • tofu
  • sweet potato
  • beetroot

Instructions

Oven Temp

  1. Set the oven to 180.

Method for Pizza Base

  1. Combine all dry ingredients together.

  2. Slowly add almond milk until all ingredients are combined and the mixture forms a dough.

  3. Need dough gently, then set aside in two balls under a damp cloth to proof.

    Give the dough at least 10 mins.

  4. Roll dough out into a circle shape.

Create your Pizza

  1. Add your toppings

  2. Sprinkle with cashew cheese

  3. Place in the oven for 15 minutes.

Enjoy your pizza. X
